Aubergine and harissa stew


The perfect mid-week meal. Healthy, filling and so nutritious, it’s also so easy to make too.

We like to serve this stew with some couscous and smashed avocado for a wholesome and filling family meal. I hope you enjoy it, Jen x


Ingredients

1 red onion

1 red pepper

1 aubergine

1 punnet cherry tomatoes

1 tin passata

1 tin coconut milk

1 tsp turmeric

1 tin butter beans

1 -2 tbsp harissa (depending on how spicy you like it)


Method

  • Fry the onion for 5 minutes

  • Add the red pepper and aubergine and fry again for 5 minutes.

  • Add the tomatoes, passata, coconut milk, turmeric and stir

  • Next add the butter beans and harissa, stir again and gently bubble for 10 minutes.

  • Serve with some couscous and smashed avocado
