Avocado and Tahini on Toast

This is my favourite brunch and it’s even better enjoyed at the weekend or when you have some more time to spare for a lazy morning breakfast or brunch.

Avocado’s are really popular, especially if you are following a plant based diet as they are so good for your health.  They are rich and creamy with a velvety texture and mild flavour, making them great for so many different recipes.

Today I am sharing my favourite way to eat avocado which is an avocado smash with a drizzle of tahini for an added boost of nutrients, all piled on top of my favourite slice of toast.

This recipe is enough for a large portion, double the quantity for more people or for a larger portion.


Ingredients

Half an avocado

2 chopped sun dried tomatoes

Handful of chopped coriander

Half a roasted garlic clove (optional but great if you have some)

Pinch salt

1 teaspoon chilli flakes (add more or less to taste)

1/2 teaspoon lemon juice (ready made is OK if you don’t have fresh)

Large teaspoon of tahini

Seeds and paprika to top (optional for taste and presentation)


Method

  • Place all of the ingredients into a small bowl and simply mash everything together using the back of a fork.

  • Toast a slice of your favourite bread (rye or granary work really well with avocado)

  • Top with the avocado smash

  • Drizzle on the tahini

  • Top with seeds, chilli flakes and a sprinkle of paprik
