Black-bean and Potato Stew

This is one of my favourite dinners EVER! I love anything with potatoes and the black-beans complement them so well. The avocado topping makes this so healthy and also the best meal ever, I really hope you love this one


Ingredients

Small bag of potatoes (approx 350g), peeled and cut into small bite sized cubes (so they will cook faster)

1 red onion, peeled and chopped finely

2 cloves garlic, crushed

2 tsp paprika

1 tsp cumin seeds

2 tbsp almond butter

2 tbsp tomato puree

1 tbsp harissa paste

2 tbsp pumpkin puree (optional but adds depth to the consistency and flavour)

2 tins black beans, drained

1 tin chopped tomatoes

Liquid base/stock (mix together the following)

1 cup fresh water

1 stock cube

1 tin coconut milk

1 tbsp soy sauce

To serve

Juice of a lime, dash of soy sauce

Cooked rice

Smashed avocado


Method

  • Fry the onion in a little oil for 5 minutes until soft

  • Add the garlic, paprika and cumin and fry for another minute

  • Add the almond butter, tomato puree, harissa paste and pumpkin purée (if using) and mix it all in

  • Next add the black beans and tomatoes and stir to combine the flavour

  • Add the liquid base/stock followed by the potatoes

  • Simmer for 15 minutes until the potatoes have softened

Use this time to cook your rice and make the avocado smash

  • Squeeze in the juice of a lime and an additional dash of soy sauce

  • Serve with rice and mashed avocado/guacamole
