Easy Banana Bread

I have made so many different banana bread recipes over the years but this one is definitely the easiest and probably the tastiest one too. Only five ingredients for the banana bread with the option of adding extras. You’ll also only need one bowl, 10 minutes to prep and 30 minutes to bake so you can have a fresh loaf of banana bread ready to eat in just 40 minutes.


Ingredients

3 very ripe bananas (mashed)

75ml vegetable oil

100g brown sugar

225g self raising flour

2 tsp baking powder

OPTIONAL (BUT WORTH IT)

50g dark semi-sweet choc chips (vegan)

50g walnuts/pecans


Method

  • Preheat the oven to 180 C and prepare a bread tin

I usually but a bread loaf liner (from wilkos) that I just pop into the bread tin as it’s so much easier than lining the tin with baking paper.

  • Mash the bananas in a medium sized mixing bowl

  • Add the oil and sugar and mix it really well

  • Add the flour (sieved) and baking powder and give it another mix

  • Add the optional extras if using

  • Pour into the lined bread tin

  • Bake for 30 minutes

If the bread is looking too brown on top simply put some baking paper over the banana bread after 20 minutes to prevent it from burning.

  • Check it’s cooked all the way through by inserting a skewer or knife and if it comes out clean then it’s cooked. If not baked for a little longer

  • Allow to cool a little before slicing


Enjoy on it’s own with a nice cup of tea or coffee or spread your favourite topping. I like to add a layer of nut butter and some fresh berries for a healthy and filling breakfast. Or enjoy as a tasty treat with family and friends
