Fluffy breakfast baked oats

These are probably my favourite baked oats yet, they taste so much like a cake yet healthy enough to enjoy for breakfast too!
I like to top mine with one of our very own Love Chocolate bars and if you haven’t already tried one then click on the link to take you to our web-shop. They really are delicious and make oats taste soooo good!
Ingredients
Large individual cake
1 flax ‘egg’ (1 tbsp flax mixed with 3 tbsp of water and left to thicken for 5 mins, this is the egg substitute and will bind everything together)
60g dates (approx 3 large dates) covered with water and soaked for 5 mins before draining (to soften)
90g mashed banana (approx 1 banana)
60ml plant milk (1/4 cup)
35g peanut butter
1 tsp vanilla essence
45g ground oats (oat flour, GF if needed)
15g cacao powder
1 tbsp coconut sugar (or caster sugar)
1 tsp baking powder
Pinch salt
Top and middle filling
Homemade ganache or homemade vegan chocolate spread (shop bought is also ok to use)
Additional extras
1/2 - 1 Love Chocolate bar cut into chunks
Method
Preheat the oven to 180C and line a large individual cake tin/oven proof bowl
Blend the flax ‘egg’, dates, banana, milk, peanut butter and vanilla until smooth
Add the remaining ingredients to the smooth mixture and gently fold together
Pour the mixture into the cake tin/bowl and bake for 20 minutes
Allow to cool in the tin for 5 minutes after baking then place on a cooling rack to cool completely
Slice the cake in half and spread a generous portion of the ganache or vegan chocolate spread to the middle
Pop the other half on top and spread another layer of the chocolate to the top
Add some Love Chocolate bar, cut into chunks and dive right in.
