Baked crumpets


Move over baked oats, there’s a new kid in town!

If you’ve never tried these before then now’s the time!

Sweet, delicious and really filling too. A portion of these with a plant latte and some seasonal fruits will fuel you until lunch time. I like to make these when I have a little extra time in the mornings so they are a perfect weekend treat.


Ingredients

For the healthy custard

1 cup plant mlk

2 tbsp cornflour

2 dates

small pinch turmeric (for custard colour, optional)

1/2 tsp vanilla

The crumpets

3 -4 crumpets - cut into quarters

small handful of raisins

Optional

Raspberries

Love vegan bar to sprinkle on top


Method

  • Preheat the oven to 180C

  • Blend all of the custard ingredients until smooth then gently heat in a. small pan until bubbling and thick

  • Add the chopped crumpets to an oven prof dish

  • Pour over the custard and raisins

  • Bake for 20 minutes or until bubbling and crispy on top

  • Add some raspberries and a Love Vegan bat crumbled on top
