Baked crumpets
Move over baked oats, there’s a new kid in town!

If you’ve never tried these before then now’s the time!
Sweet, delicious and really filling too. A portion of these with a plant latte and some seasonal fruits will fuel you until lunch time. I like to make these when I have a little extra time in the mornings so they are a perfect weekend treat.
Ingredients
For the healthy custard
1 cup plant mlk
2 tbsp cornflour
2 dates
small pinch turmeric (for custard colour, optional)
1/2 tsp vanilla
The crumpets
3 -4 crumpets - cut into quarters
small handful of raisins
Optional
Raspberries
Love vegan bar to sprinkle on top
Method
Preheat the oven to 180C
Blend all of the custard ingredients until smooth then gently heat in a. small pan until bubbling and thick
Add the chopped crumpets to an oven prof dish
Pour over the custard and raisins
Bake for 20 minutes or until bubbling and crispy on top
Add some raspberries and a Love Vegan bat crumbled on top
