Peanut pulled jackfruit


If you’re enjoying a plant based diet but are missing or craving a meaty dish then this pulled jackfruit is for you. Surprisingly similar to pulled pork and so tasty with the peanut dressing. You’re going to love it!

Ingredients

pulled jackfruit

1 onion - chopped

1 clove garlic - crushed

1 tin shredded jackfruit - drained

1 tin chickpeas - drained

Peanut sauce

3 tbsp peanut butter

1 tbsp rice vinegar

1 tbsp maple or agave syrup

1 tbsp seseme oil

1 tbsp soy sauce

1 tps- 1 tbsp sriracha (depending on how spicy you like it)

50mls plant milk


Method

  • Fry the onion for 5 minutes until it’s nice and soft

  • Add the garlic, jackfruit and chickpeas and mix until combined. continue to gently fry for 3 minutes

  • Whilst the mixture is frying whisk together the peanut sauce ingredients in a medium sized bowl

  • Add the sauce to the jackfruit and stir until combined.

  • Season with salt and pepper and serve with some grains, noodles, rice or in a wrap
