Strawberry Ice-Cream

This delicious strawberry ice-cream is made using only 3 ingredients and is so tasty. It is a cross between an ice-cream and a sorbet making it perfect for a hot summers day or to complement tasty desserts. We like to serve ours in a chocolate cone (Asda brand is vegan) and top with sprinkles and half a morello cherry Love Vegan bar, sliced in half and used instead of a flake making it so much healthier.

I also like to add this ice-cream to a homemade chocolate torte and they work so well together.

If you don’t have an ice-cream maker you can follow the steps in the method until it says add to the ice-cream maker. Instead add the mixture to a large tub with a lid and put it straight into the freezer. You need to give it a good stir every hour or so until it’s frozen. The results wont be as smooth as the ice-cream maker but it will still taste delish :)


Ingredients

450g strawberries

175g caster sugar

2x 200g vegan creme fraiche (I used oatly)


Method

Before you start making the ice-cream you will need to make sure your ice-cream maker is in the freezer overnight in order for it to work.

  • Add the strawberries and sugar to a blender and whizz until smooth

  • Add the strawberry mixture to a large jug (easier to pour) or large mixing bowl and add the creme fraiche

  • Stir until fully combined

  • Put the ice-cream maker on and slow;y pour the ice-cream mixture into the ice-cream maker

  • Churn for around 20 minutes or until the ice-cream is thick and smooth

  • Transfer to a sealed container and pop in the freezer
