Tzatziki Dip

This is the perfect dip to accompany a range of foods to add a burst of delicious flavour, with the addition of being refreshing and creamy. Whether you choose it in a classic Greek meal (we like it with our ‘feta’ parcels, or pile it on top of your wraps or use it as a dip with your favourite crudities I’m sure you’ll love it. It’s also 100% vegan, healthy, easy to make and super tasty. It will keep for a couple of days in the fridge but is best eaten straight away.


Ingredients

1/2 cup vegan yogurt (I use the coconut collaborative as is nice and thick)

1 cucumber (grated or finely chopped with all the water squeezed out)

2 tablespoons olive oil

1 grated garlic clove

Squeeze of lemon juice

Salt and pepper to season


Method

  • Grate or finely chop the cucumber and squeeze out as much water as possible. You can pop the cucumber into a clean tea towel and squeeze or simply squeeze by hand.

  • Add the yogurt, oil, garlic and lemon juice to a bowl and mix

  • Add the cucumber and give another mix until its all evenly combined

  • Season with salt and pepper

  • Use straight away or chill until you’re ready to serve.

This is best eaten on the day but will keep in the fridge in a sealed container for a couple of days.
