Vegan Cornflake Tart

Take yourself back to school with this classic cornflake tart! It is the most perfect comfort food, sweet, sticky and crunchy all at the same time, serve with vegan custard for the best pudding ever.


Ingredients

320g box of ready made shortcrust pastry (check it’s vegan as not all brands are)

50g vegan spread

125g golden syrup

25g brown sugar

100g cornflakes - use nestle gofree cornflake or other gluten free brands for a GF options

125g strawberry jam

Home-made or ready made vegan custard to serve


Method

  • Preheat the oven to 180C and leave the pasty out to warm to room temperature

  • Press the pastry into a flan case making sure you leave a little over the edge as the pastry may shrink during baking. (you may need to roll the pastry a little to allow it to fit into the case)

  • Blind bake the pastry according to the packet instructions (usually around 25-30 mins)

  • Whilst the pastry is baking prepare the filling.

  • Melt the vegan spread, golden syrup and sugar in a medium sized pan

  • Leave to cool for 5 minutes a little until the pastry is cooked

  • Once the pastry is cooked add the jam and smooth it all around the base

  • Add the cornflakes to the sugar mixture and mix well.

  • Add the cornflake to the pastry and jam base and smooth it down

  • Bake again for around 10 minutes or until it’s just starting to brown

  • Remove from the oven and leave to cool slightly

  • Tin the pasty edges with a knife if they need typing up and slice

  • Serve with your favourite custard, cream or ice cream or enjoy on it’s own a s a snack

This may be eaten hot or cold, I hope you love it
