Raw Cookie Dough

Simple raw cookie dough balls that taste incredible! They be be enjoyed as a treat on their own or added to ice cream for a DIY cookie dough ice-cream
This recipe is a raw recipe using regular wheat flour. It is imperative that wheat flour is heat treated* before consuming to kill off any nasty bacteria that may be present in the flour. It’s really simple to do and makes the cookie dough safe to eat. Please note you don’t need to heat treat the coconut flour in this recipe
Ingredients
150g plain flour (HEAT TREATED)
115g vegan spread
150g soft brown sugar
2 tsp vanilla extract
1-2 tbsp vegan milk
1-2 tbsp coconut flour (helps draw out moisture)
HOW TO HEAT TREAT THE FLOUR
Pre-heat the oven at 180C
Spread the flour onto a clean baking tray and bake for 7 minutes
Allow the flour to cool completely.
Method
Heat treat the flour as directed above
Cream the butter and sugar together in a mixing bowl
Add the cooled flour, sugar, vanilla, 1 tbsp milk (you may need more later) and 1 tbsp coconut flour and mix until combined
If the dough is too soft add 1 more tbsp coconut flour, if it’s too dry add 1 more tbsp milk
Shape the dough into a large ball using your hands to check that it holds its shape
Now roll into smaller balls (I made 25) and pop them into the fridge for 1 hour to set
You may also make very small bite sized balls to use in ice cream or to top desserts/ice-cream too.

*NEVER use regular wheat flour in your no-bake recipes if it has not been heat treated at home first. Wheat flour has not been previously heat treated during the manufacturing process and contains harmful bacteria, salmonella and E. coli which can make you sick. So, when eaten raw or used in your no-bake recipes (without heat treating or cooking to kill the harmful bacterias away) it can cause severe abdominal cramps and diarrhoea.
