Ooey Gooey Baked Oats

This breakfast is so indulgent it feels like a real treat! It’s actually really healthy and very tasty, especially if you hold back on the sugary drizzle (leave that for the weekend)

It’s also 100% vegan and gluten free (if you choose GF oats)

The oats become very cake like and the middle is very gooey, it’s a little like a lava cake..and the best part of vegan baking is that you can enjoy it very ooey gooey.

Top Tip

Make this super indulgent serve with some vegan ice-cream for a delicious pudding swap


Ingredients

Oats

3/4 cup plant milk

1/2 cup oat flour (make your own by whizzing up oats in a high speed blender until a fine powder is formed)

1 tbsp cacao flour

1 tsp flax seed

1/2 Love Vegan bar cut into small chunks

pinch salt

Middle

1 tbsp vegan cream cheese

1 tbsp almond nut-butter

1 tsp liquid sweetener (maple/agave/fruit syrup)


Method

  • Pre-heat the oven to 180C

  • Combine all of the oat ingredients together in a small bowl and leave to one side

  • Mix the middle ingredients in another bowl and mix until combined (Top Tip; Leave the cream cheese out of the fridge to allow it to settle at room temperature to ensure no lumps)

  • Add half the oat mixture to an oven proof bowl

  • Add the middle nutty filling

  • Cover the middle with the remaining oat mixture

  • Add an optional few chunk of the Love Vegan bar to top

  • Bake for 10 mins for a gooey middle (my fave) or 15 mins for a thicker consistancy

  • Serve warm on it’s own or top with a drizzle of date syrup, nuts, seeds, goji berries and tiny chunks of the remaining Love Vegan bar. (Or add your own favourites)
