Creamy Chickpea and Spinach Curry

We all love a good old curry, this chickpea and spinach is really healthy, loaded with protein but most important of all is easy to make and tastes delicious. Great for when you don’t have a lot of time but still want something tasty, healthy and filling. This is one of my favourite recipes as it’s so simple and quick to make, my kids also love it which is a great thumbs up too.


Ingredients

1 onion

1 chilli (I used a green chilli to make a mild curry but choose your favourite depending on how spicy you like your curry)

1 garlic clove, grated

Ginger, about a thumb sized piece, grated

1 tbsp of each spice- coriander, cumin, curry powder.

2 tbsp tomato puree

1 small cup of water (to allow the above ingredients to blend together)

2 tins of chickpeas

1 tin of chopped tomatoes

1 tin of full fat coconut milk (using ONLY the cream from the top and not the coconut water underneath)

100g spinach

Optional fresh coriander to garnish (this makes the finished curry even better)


Method

  • Begin by chopping and frying the onion once it’s cooked remove from the heat.

  • To a blender add the chilli (with seeds if you like spice), grated garlic, grated ginger, spices, tomato puree, cooked onion and water. blend until you have a smooth liquid/paste.

  • Add the curry sauce to a large pan, wok or frying pan.

  • Add the chickpeas and tomatoes and simmer until the sauce has thickened (around 15 minutes). Add more water if the sauce is looking too thick.

  • Just before you are ready to serve, add the coconut cream and stir it into the sauce.

  • Add the spinach and gently stir until the spinach had wilted down.

This curry will keep in the fridge for a couple of days and freezes well too.
