Marmalade stir-fry


Mid-week meals sorted with this tasty stir-fry. This will soon make a regular family favourite. Oh, it’s so simple to make too :)

This marmalade stir-fry is so tasty, if you like sweet and sour then you’ll love this. It is on the sweet side so feel free to add more chilli if you’re not a huge fan of sweet and savoury dishes. Serve with a heap of rice or noodles and a portion of steamed veggies and you’re good to go.


Ingredients

1 block firm tofu

For the marinade

2 tsp corn flour

125mls water

150g marmalade

4 tbsp soy sauce

2 cloves garlic - crushed

1 thumb sized fresh ginger, finely sliced or minced

1 chilli finely diced (add more or less to suit your taste buds)

2 tbsp vegetable/rapeseed oil

To serve

Cashew nuts, and sunflower seeds (toasted) and sesame seeds - use as much or as little as you like.

Your choice of veggies and rice to serve.


Method

  • Chop the tofu into square chunks and leave to one side

  • Add all of the marinade ingredients to a large bowl and whisk until combined

  • Add the tofu chunks and leave for an hour (or at least 20 minutes if you’re short on time).

Preheat the oven to 180C (or warm the airfryer)

  • Remove the tofu from the sauce and roast for 20 mins in the oven or 10 mins in the air fryer, or until crispy.

  • Whilst the tofu is cooking, warm the sauce in a small pan over a low heat until it has thickened and turned sticky

  • Add the crispy tofu to the sauce and stir until combined

  • Sprinkle the toasted nuts and seeds on top and serve with veggies and rice or noodles
