Overnight Caramel, Chia and Cherry Pot

I LOVE this breakfast pot. It’s not only easy to make but it tastes so good too.

The combination of the chia and oats work so well together and the added texture and flavour coming from the caramel and peanut love vegan bars tops it all off nicely.


Ingredients

1/4 cup cacao powder

4 tbsp maple syrup

1 1/2 cups plant based milk

1/4 cup chia seed

1/4 cup oats

1 cup frozen or fresh cherries or berries of your choice, chopped into small chunks if needed

To top

1 love vegan caramel bar

Seasonal berries


Method

  • Mix the cacao and maple syrup in a small bowl until you have a thick paste

  • Ad the plant milk and whisk until smooth

  • Add the chia seeds and oats and mix

  • Stir in the cherries/berries

  • Cover the bowl and pop it in the fridge to set overnight.

In the morning

  • Remove the chia and oat mixture from the fridge and add a touch more milk if it’s too thick (I like mine quite thick)

  • Add the chia and oat combo to a bowl/jar

  • Sprinkle on 1/4 love vegan bar and a couple of cherries or whatever fruit you have/is in season

Leftovers will keep in the fridge for a couple of days in an airtight container
