Red Velvet Oats

Everything is better with a little heart! Who agrees?
I love this breakfast so much as it tastes just like a red velvet cake but its just the same as eating a loaded bowl of porridge! The red peanut topping is soooo good! And let’s not forget the Love Chocolate and mini Jamie dodges. Just heaven in a bowl x


Ingredients

For the cake oats

40g oat flour (blended oats, can be G/F)

25g/1 scoop vegan protein powder (G/F if needed)

1/2 tsp baking powder

2 tsp beetroot powder

125ml plant milk

1/4 ripe banana (mashed)

1/2 - 1 mashed date

Topping

Mix together the following: 1 tbsp nut butter, 1 tsp maple syrup, a pinch of beetroot powder

Optional topping

2 x mini jammy dodger biscuits

Berries

Love Vegan bar


Method

  • Preheat the oven to 180C

  • Add the oats, protein powder, baking powder and beetroot powder to a bowl and stir until combined

  • Add the milk, mashed banana and mashed date and mix until you have a thick batter

  • Pour the batter into a small oven proof bowl and bake for 15 minutes

Whilst the oats are baking you can mix the nut butter topping together (see ingredients)

  • Remove the oats from the oven and allow to cool for 5 minutes before adding the toppings
