Super Tasty Vegan Stir Fry

If you’re looking for some simple meal inspiration then you can’t beat a good old stir-fry.

This is the perfect recipe to use up what ever veggies you have left in the fridge or if you are planning on making this then you can buy your favourite veggies. The following recipe will feed two hungry people


Ingredients

For the veggie noodles

1 pepper

Packet of tender stem broccoli

Half a packet of fine beans

Half a packet of bean sprouts

Tofu or meat substitute (optional)

1 packet of rice noodles

Cashew nuts and mixed seeds (toasted) to top the noodles

Ingredients for the sauce

My favourite sauce is spicy sesame, for this you’ll need:

3 tbsp soy sauce

3 tbsp water

2 tbsp brown sugar, maple syrup or agave

1 tsp sriracha

1/2 tsp sesame oil


Method

  • Begin by frying the veggies in a wok or frying pan.

  • Add bean sprouts, some chunks of tofu or meat substitute (if you like) and mix well and fry for a few minutes (keep an eye so it doesn’t stick to the bottom of the pan)

  • Add the rice noodles

  • Whilst the noodles are cooking whisk together the ingredients for the homemade sauce and then and add to the cooked veggies and noodles, mix until the sauce coats the noodles and veggies.

Divide the noodles into a big bowls and top with roasted cashews and mixed seeds.
