Vegan Chilli

This warming chilli is just the job when you are short on time but need a filling and hearty dish of food. It’s a really simple recipe that all the family can make and enjoy together. In fact my youngest son Ollie (13) makes this from scratch without the need to look at the recipe and has been doing for a couple of years now, it’s that easy to remember once you’ve made it a few times.

I like to use a soy meat substitute in this chilli.( I use THE MEATLESS FARM CO.) as I find its so similar to a meaty version so everyone can enjoy this…meat eaters wont even taste the difference.

If you don’t like to use meat substitute then you can simply add another tin of beans (chickpeas work nicely) and a tin of lentils. Or use fresh if you have time to soak them overnight.


Ingredients

1 large punnet of cherry tomatoes (halved) Or you may also use a tin of chopped tomatoes

1 onion (chopped/diced into small chunks)

1 clove of crushed garlic

1 red chilli - finely chopped and de-seeded

splash of red wine (optional but tasty)

2 chunks of 70% dark chocolate (secret ingredient for extra indulgence)

Salt and pepper to season

1 tsp cumin

1 tsp chilli flakes (more or less to suit taste)

Tomato puree (a big squeeze)

Meat substitute (Fry this before adding to the sauce)

Handful of fresh basil chopped

1 tin of kidney beans

Rice and nachos to serve.

Method

  • Add the onions to a pan and fry for a few minutes, add the garlic and chilli and mix

  • Add the tomatoes and allow to simmer for 5 mins.

  • Add a splash of red wine, salt pepper, cumin and tomato puree and reduce down for 20 mins. (add a little water if the sauce reduces too much)

  • Add the fried meat substitute, kidney beans and basil and simmer for another 5 minutes

  • Serve with your choice of rice and nachos.


The perfect family favourite dish or equally as good to serve for a dinner party with family and friends and enjoy with lots of lovely Mexican dips and treats for a fun evening to share together.
